Kale pasta with chilli and anchovy

In a large pan, boil some penne or other tubular pasta. While it’s cooking, heat 2 tbsp olive oil in a saucepan, then sizzle a finely sliced red chilli, 2 chopped garlic cloves and 4 finely chopped anchovies. Add shredded kale, then gently fry until tender, adding a drop of water if needed.

Drain the pasta, reserving a few tablespoons of the cooking water, then toss the pasta and water through the kale, adding 2 further tbsp olive oil, juice of half a lemon and grated Parmesan. Serve scattered with Parmesan shavings.
